I have a question for all of you guys, what do you think a decent No Limits coaster needs? Nothing is too obscure for your comments, just say anything that comes to mind.
I'm bringing this topic up because it seems no matter how hard I work on my coasters, there always seems to be somthing missing. Have any of you ever felt like that?

I'm sorry if I've come across as blunt, but I try to help.
Here are some things I would try to do if I were to take a crack at a good coaster:
The biggest problem I see with almost all coasters is pumping. It's a very easy issue to fix, yet people seem to completely ignore it. The solution is very simple; track segment length. People just make them far too long. Sure it's fast to just half-*** it and make long sections, but that's the problem. Divide the track up into small segments, say a few car's length. The use the smooth tool, it is a must if you want a decent coaster. Before rushing and going to another segment, make sure you perfect it.
Heartling. It's huge, in fact No Limits even put a heartlining tool into the editor. If you go to the view tab, you can turn on the heartline, and you can see how you need to bend and tweak the track. It really does help.
Colors; please do not use straight "out of the tube" colors. Play around, tone them done a little so they aren't quite as "neon-ish". And never, ever use straight black. It's very unproffesional.
Speed; keep the coaster moving. Constantly try out your project in the simulator to adjust track to meet the needs for pacing. I've seen countless coasters that seem to stall through the elements. Just keep it going.
Pacing; this is the biggest problem with coasters I see, they are just plain boring. Tighten up the curves, pour on the g's, and compact the layout. It keeps the rider interested and will have them confused on where the coaster is headed next. I'm serious when I say that a School Bus ride is more thrilling than many coasters I see. Seriously, add some direction changes. It makes an incredible difference.
There are alot of other smaller things, just let me know if what I posted helps at all.

With the shorter vertex method, I usually build them big just to get the shape in and then later on I split the segments.
